It is the beginning of November and the weather has just finally reached the point where I can say it’s SOUP SEASON!!! I love soup season, it is one of my favorite things about the colder weather. It is also something that J and I don’t really agree on, he’s okay with soup sometimes but not necessarily every single day. He’s crazy, I love making a big batch of soup on Sunday and enjoying it the rest of the week. No shame.
Some of my favorite recipes are ones I have found on Pinterest, so being the Pinterest addict that I am I figured I could share the ones I test out with you.
First up! A Cheesy Chicken Enchilada soup that is SUPER easy! You can find the recipe here. I did change a few things…like the chicken, I just really hate baking chicken. So I decided to take the easy way out and bought a rotisserie chicken from Hy-Vee [heck yes I’ll take a 10 cent fuel saver] chopped it up and tossed it in. I also left out the corn, I’m just not a huge fan of adding corn in soups.
If you need an easy soup with items found in pantry [maybe not the enchilada sauce all the time…] then you should definitely give this one a shot! I know I will, it has been forever added to my recipe book.
